2. 春雞解凍,洗淨,用廚房紙抹乾水份,下調味料搽勻春雞的表皮及腹腔醃2-3小時。

3. 將糯米飯釀入春雞內,用牙籤將口封好,用煮食綿繩將春雞紮好。

4. 預熱焗爐,將春雞放入鑄鐵鍋內,配菜放下春雞向上,蓋上鍋蓋,以160度每邊焗30分鐘。

5. 打開鍋蓋,220度焗每邊焗10-15分鐘至表面金黃,即成。

7. 甘筍去皮;將甘筍及茄子滾刀切。

8. 鑄鐵鍋內放入水、無鹽牛油、黃糖、海鹽及甘筍,以最少火煮約10分鐘,加入茄子多煮5分鐘。

9. 準備糯米飯

10. 糯米用2量杯水,浸至少4小時。濾去浸糯米水,放入電飯煲內,用煮飯程式煮至自動跳掣。

11. 潤腸拖水,去腸衣,切粒,備用。蝦米浸軟, 去除蝦腳。白鑊將蝦米炒香,加入潤腸炒香,盛起,待用。電飯煲跳掣後,加入潤腸及蝦米,再按掣,跳掣焗15分鐘,攪勻,放涼,備用。
