2. 一個蛋餅大約3湯匙麵粉,我今天做3個蛋餅,所以舀9大匙麵粉。再加入一小匙鹽巴調味。

3. 取一碗水,先倒8分的水至麵粉內,攪拌至無顆粒。然後適狀況調整麵糊濃稠度至圖中感覺。

4. 倒入青蔥拌勻。

5. 鍋內倒入少許油。換一隻較大的湯匙舀兩大匙至鍋內。拿起鍋子讓麵糊均勻流動至圓形。

6. 凝固後翻面。

7. 再翻回來後,倒入打散的蛋。

8. 待稍微凝固後,再翻面。並取一片火腿放在蛋餅下面加熱。

9. 待蛋完全凝固後翻面。

10. 捲起來。再加一點油,把兩面煎至微焦。

11. 翻倒另一面。
